Důvod pro zavržení OpenSSL lze dovodit z odkazované dokumentace:

The code of this API (located in openssl directory), does not contain OpenSSL itself but is intended as a wrapper for applications using the OpenSSL API. It uses mbedTLS to do the actual work, so anyone compiling openssl code needs the mbedtls library and header file.

The ESP-TLS component has an option to use mbedtls or wolfssl as their underlying SSL/TLS library. By default only mbedtls is available and is used

Prostě přešli na Mbed TLS a nechce se jim udržovat emulaci OpenSSL. Za rok za dva emulaci odstraní úplně.

Když se vydáš první volbou a budeš si tam openssl dodávat, tak jdeš proti vlně a dřív, nebo později narazíš. Pokud druhá možnost pokrývá tvé potřeby, šel bych touto cestou.
